When you arrive at your chosen venue in Ireland, you check in with the team and get shown over to your table. Your host gets you settled into the room before the sommelier comes over to say hello, talking you through how the tasting works and what styles of wine are on the menu for your visit.
The session starts as the host brings out the first bottle, explaining where the grapes were grown and how the climate in that region shapes the overall profile. As the glasses are poured, you learn how to inspect the shade, pick out subtle scents and gauge the texture on your palate as you take a sip. You can take your time with every glass, as the tasting runs at a relaxed pace so you can chat together while you drink.
As you move through the session, the sommelier introduces a selection of bottles sourced from top growing regions across the world. You compare light, crisp whites against heavier reds, learning how things like acidity, serving temperature, and tannins change how the drink feels in your mouth. Your sommelier answers any questions as you go, passing along simple tips on food pairings and how to choose a better bottle when you next buy one.
You finish the final glass of the lineup, taking in the remaining flavours as the sommelier leaves you to relax at your table.

The experience is for two people. Depending on the venue it may just be you and your guest on the experience or your may form part of a small group.
